Fresh Fish Like Alaskan PF Cod Are Outstanding in Taste

Boston Sword & Tuna has recently been receiving shipments of outstanding fresh fish -- Alaskan PF Cod specifically -- which is longline caught and immediately frozen at sea. These snow-white fresh fish fillets are now readily available at moderate prices.Fresh Fish

Fresh Fish Process

The longline fish are brought on board one-by-one, preventing any bruising and bloods spots. Once on on board it then gets bled alive, securing the freshness and delicate texture. The fresh fish is bled for a short period of time in clean, flowing water. This removes the blood and returns cleaner flavor, white color, and firmer meat. Next it is cut to gut the insides, both automatically and by hand, placed into a tank of fresh, cold sea water, and frozen to a minimum of -24° C. 

We purchase this cod from the catcher/processor F/V Alaskan Leader; which is a 150 ft. freezer longliner built in 1991. This vessel was designed specifically to longline groundfish and process onboard. Alaskan Leader has been one of the top producers in the Bering Sea since its maiden voyage in 1991 and is also the 2nd largest longliner built in the U.S. with its sister ship the F/V Bristol Leader being the largest.
