The Norwegian longliners use the most modern, sustainable methods to fish the cod; and they catch the best cod on the market in the cold, clear waters of the Barents Sea in northern Norway. These methods and location make for unparalleled quality fresh fish.
The longline fresh fish are brought on board one-by-one, preventing any bruising and bloods spots. Once on on board it then gets bled alive, securing the freshness and delicate texture. The fresh fish is bled for a minimum of 20 minutes in clean, flowing water. This removes the blood and returns cleaner flavor, white color, and firmer meat. Next it is cut to gut the insides, both automatically and by hand, placed into a tank of fresh, cold sea water, and frozen to a minimum of -24° C.
