The ice cold waters of Georges Bank are home to an exceptional supply of fresh haddock during this time of year, and the Georges Bank fishing season has officially opened. Fresh GroundfishFresh Groundfish in the Form of Haddock

The quality of fresh haddock harvested during this season is excellent, with the fish all being dragger caught. BST customers can rely on there being ample supply, considering about 90% of the boats catch will be haddock for our fresh groundfish inventory.

Haddock are recognized as fresh groundfish as they live towards the bottom of the ocean. Haddock has a bit of a sweet taste to it, and a finer flake than cod. Raw haddock is white and becomes even whiter once cooked. Fresh haddock has a clean, white flesh and has excellent cooking versatility. The freshness of a haddock fillet can be determined by how well it holds together, with fresher fillets being the firmest of this fresh groundfish.

Michael J. Scola

While earning his degree in business, Michael spent summers and winters working the floor at Boston Sword & Tuna and learning the seafood business from the ground up. As a fifth-generation fishmonger and handled different species, lumped sword and tuna, sorted through vats of haddock and cod, broke down salmon cases, graded the fish, and more. During this time, Mike was a veritable sea sponge, learning from the most-experienced seafood professionals in the game while acquiring the tools needed to be successful in this gritty industry.
