Did you know that Boston Sword & Tuna is a premier supplier of fresh Icelandic haddock? Although we also carry Canadian / domestic haddock, we move high volumes of Icelandic haddock and other fresh groundfish year after year. The sizes of fresh groundfish vary, but we typically offer anything from 8/12's to markets.
Fresh Groundfish Brought to the Top
Haddock are recognized as fresh groundfish as they live towards the bottom of the ocean. Haddock has a bit of a sweet taste to it, and a finer flake than cod. Raw haddock is white and becomes even whiter once cooked. Fresh haddock has a clean, white flesh and has excellent cooking versatility. The freshness of a haddock fillet can be determined by how well it holds together, with fresher fillets being the firmest.
Icelandic haddock is considered to be fairly isolated from surrounding haddock stocks due to the deep waters of the Denmark Straight to the west, the Faroe-Iceland channel to the south-east, and the Norwegian Sea in the east. Although haddock are a fresh groundfish found throughout Icelandic waters, the majority of supply can be found along the south and west coasts at depth less than 200 meters.
