Try This Grilled Salmon Recipe to Earn Ooohs and Aaahs
One of our favorites ways to cook salmon is over hot coals on the grill. Whether you are using a charcoal grill or a gas grill, the results are always wonderful. While the paprika and ancho chili powder in this recipe packs a little heat, it is offset by the sweetness of the brown sugar and maple syrup. The juxtaposition of these ingredients results in a wonderful flavor that complements the delicateness of the salmon, especially when interacting with the intense heat of the grill.
Always heat your grill to medium-high before placing your Perfekt Salmon fillets on the grate. To test the temperature of your grill, hold your hand about one inch above the grate. At medium-high, you should be able to hold your hand over the heat for three to four seconds before pulling it away from the grill. A medium-high grilling temperature ensures the salmon cooks gently and thoroughly, while also keeping it from sticking excessively to the grate.
While the grill heats, rinse your Perfekt Salmon fillets, pat them dry, and prepare the rub mix. Brush the skin lightly with olive oil (we use a spray bottle that enables us to mist the salmon with a very light coating of oil). Rub the mix over both sides of the fillets.
Brush the cooking grate with oil. Place the salmon on the grill and cover. Cook, undisturbed, until the salmon is about 60 percent cooked. Using a wide spatula, flip the fillets and continue to cook until your desired degree of doneness is reached. Keep in mind that a one-inch-thick salmon fillet will cook in about six to 10 minutes. After six minutes, it will be a little pink in the middle. After 10 minutes, it will be cooked through.
If white beads appear on the surface and sides of the salmon, it's a sign that your fish is overcooking – and there’s nothing worse than overcooked salmon. When the salmon easily flakes with a fork, it is done. The time to test it is when the salmon turns opaque and feels slightly firm.
When the salmon is cooked to your likeness, remove it from the grill and let it rest. The fish will keep cooking for a few minutes after you take it off the grill.
- 1 teaspoon smoked paprika
- 1 teaspoon ancho chili powder
- 1 teaspoon sea salt
- ½ teaspoon light brown sugar
- ¼ teaspoon cumin
- 2 8-ounce Perfekt Salmon fillets
- Vermont pure maple syrup
- Fire up the grill.
- Combine the first six ingredients.
- Rub mix evenly over both sides of Perfekt Salmon fillets.
- Grill four to six minutes per side or until your desired degree of doneness.
- About a minute before removing from grill, brush fillets with maple syrup, grill 30 seconds, flip the fillets, and brush the other side for an additional 30 seconds.
- Remove from grill and let rest for two to three minutes.
