Our Life on the Docks
Starting the job at dawn every morning makes a difference. It either takes its toll on your sleep or your nightlife. Your choice. But after five generations of getting down to the docks before dawn, you get the hang of it.
One thing that makes it worthwhile is getting your choice of the very best. That’s because the freshest, most flavorful fish that those cold North Atlantic fishermen could find arrive at the Boston Fish Pier at the crack of dawn, too, so we’ve got to be there – it’s just our way. The knowhow we gleaned from four decades trolling Boston’s docks are now used to select the finest seafood from sustainable sources around the world.
As our family grew, so did our business, and nearly 40 years ago the Scola family began making Boston Sword & Tuna the one-stop seafood source we are today. Immigrating from Sicily meant bringing along with them what they knew, and that was seafood.
From the docks of Sicily to the docks of Boston, BST started as a small company selling haddock from a work bench down the Pier, and eventually got a small facility. The idea was so successful that we moved down the road from the Pier to double our facility, and we’ve continued opening more doors to the world beyond.
How to Know When You Know
When we started more than five decades ago, we did this work to supply a few of Boston’s better restaurants and hotels, and eventually grew to supply major supermarkets. Now that airplanes and computers look like they’re here to stay, we thought it would be a good idea to offer the same quality to you as a sea to home online fish market, with speedy delivery right to your door. We want the entire country to experience and have access to the truly fresh, highest quality seafood that we enjoy here in New England.
Boston Sword & Tuna is happy to announce we will be releasing a weekly sales memo to keep our customers as updated and in-the-loop as possible. Dave Hopkins will be collecting a recent market analysis from the heads of all divisions and putting together a document for our sales team, which we will also post right here.
Being one of our premier products, we take a lot of pride in the swordfish we bring into our house. In order to maintain the best quality swordfish, we must adapt with the weather throughout the seasons and source from the best waters. Our current supply is outstanding quality with just the right type of variety our customers are consistently looking for.
The summer is obviously a huge season for seafood, but warm waters aren't always the best environment for quality with some species of fish, fresh swordfish included. That being said, the local North East waters of North America, especially Canada, are just the right temp during this time of year and become home to a gorgeous selection of fresh swordfish.
Aside from local and Canadian waters, we have been sourcing a large portion of our fresh swordfish inventory from Australia, where it is currently their winter and the waters also become an excellent home to some great swordfish.
Again, adapting with the weather throughout the seasons and being able to source product throughout the world with our experience and expertise is just another reason why Boston Sword & Tuna is one of the nations premier seafood suppliers. Our fresh swordfish is a token to this truth.
Does anyone else agree that this is hands down one of the best holidays / weekends of the year? We are all extremely fortunate (those of us in the U.S.) to live in America - and what better way to celebrate our American independence than with our friends and family eating and drinking. Naturally, a celebration of this caliber calls for an assortment of fresh seafood!
Fresh Seafood Appetizers
Keeping things simple and straying from the center of plate items (i.e. swordfish, tuna, salmon, lobster, scallops, haddock, etc.) we figured it would be most beneficial to suggest a few picker items to serve as fresh seafood appetizers throughout the day. Two standard favorites: clams and shrimp cocktail.
These fresh seafood dish picks are sure to impress and sure to satisfy. They provide the summer vibe we assoiciate with seafood and set the bar for party apps. Not only that, but they are both extemely easy to prepare. Here's what we suggest:
Clams: Cherrystone Clams Steamed in Wine With Parmesan Drizzle ----- (click hyperlink for instructions to cook this awesome fresh seafood dish)
Shrimp Cocktail: Frozen Campeche shrimp is honestly a go to item for us personally when we bring something home. They come ready for cooking - out of the shell - and are as easy to prepare as they are delicious. All you need to do is boil them in water and prepare a cocktail sauce. Simple as that.
Happy 4th of July and God Bless America!
Boston Sword & Tuna is happy to announce that we now offer a wide assortment of our fresh seafood products - retail ready in sealed tray packs - at the Burlington, MA Farmers Market.
