Fresh Fish of Hawaii
Commonly known as ono in Hawaii, meaning “good to eat,” Wahoo flesh is whiter, flakier, and possesses a more delicate texture than that of other fast-swimming pelagic fish. Wahoo is often compared to Mahi.
Opah, known as the moonfish, is one of Hawaii’s most colorful commercial fresh fish species. It is part of the pelagic species and is typically found in deep waters. Opah flesh is rich in fish oil content and has excellent cooking versatility.
Tombo is Hawaiian albacore and a consumer favorite - a great fresh fish to mix up a summer menu. Likewise, Hebi is a Hawaiian spearfish similar to Wahoo and Marlin.
Nairagi, or striped marlin, is acknowledged as the best tasting of all marlin due to its tender flesh. Commercial landings in Hawaii reach their peak during the winter and spring and are lightest during summer months. The natural color of nairagi flesh varies from light pink to deep orange-red.
Blue marlin, on the other hand, has pale-pink flesh that appears white when cooked. The flesh is high in fat content, firm, and has a mild flavor. Marlin is a fresh fish best-served grilled, but is also great for other cooking methods.

The longline fresh fish are brought on board one-by-one, preventing any bruising and bloods spots. Once on on board it then gets bled alive, securing the freshness and delicate texture. The fresh fish is bled for a minimum of 20 minutes in clean, flowing water. This removes the blood and returns cleaner flavor, white color, and firmer meat. Next it is cut to gut the insides, both automatically and by hand, placed into a tank of fresh, cold sea water, and frozen to a minimum of -24° C.

We purchase this cod from the catcher/processor F/V Alaskan Leader; which is a 150 ft. freezer longliner built in 1991. This vessel was designed specifically to longline groundfish and process onboard. Alaskan Leader has been one of the top producers in the Bering Sea since its maiden voyage in 1991 and is also the 2nd largest longliner built in the U.S. with its sister ship the F/V Bristol Leader being the largest.

Icelandic haddock is considered to be fairly isolated from surrounding haddock stocks due to the deep waters of the Denmark Straight to the west, the Faroe-Iceland channel to the south-east, and the Norwegian Sea in the east. Boston Sword & Tuna’s fishing vessel Iron Maiden returned home to the Boston Fish Pier yesterday where we unloaded over 40,000 pounds of the best quality fresh swordfish we see all year.
Fresh Swordfish is Prime This Time of the Year
The Iron Maiden fished the Grand Banks, where the gulf stream meets the labrador current 800 miles east of Cape Cod, to the Flemish Cap, which is another 250 miles east. These are the prime late summer and fall fishing grounds for large fresh swordfish.
Right now is the best time of the year for quality fresh swordfish due to the east coast water fishing season. The fish are feeding hard and fattening up for the winter. The catch is averaging over 100 pounds per fish, and we are well stocked. Our team is ready to handle orders ranging from 10 pounds to 10,000 pounds for any given customer.
Despite these being some of the best quality swordfish we see all year, it is actually some of the best prices we see all year as well due to the abundant supply that comes around after the grilling season. It is the simple economics of supply and demand, and the supply is the best eating fresh swordfish of the year!
