Why North American Lobster is Best

The "True Lobster"

Twenty yards from the North Atlantic, on the Boston Waterfront, is a holding tank with 50,000 pounds of capacity, where Boston Sword & Tuna keeps lobsters briefly, on their way to joining our shellfish and online fresh fish delivery. Everyone in that tank is a genuine North American lobster, or Homarus americanus. They are better known as “true lobsters,” and there are several good reasons why they earned that name.

Though the species ranges from Labrador to Cape Hatteras, we are fortunate to have the very best nearby, off the shores of Maine and the Canadian Maritimes.

The First Reason is Big

The size of the true North Atlantic lobster sets it apart. Typically, they reach a length between eight and 24 inches, and the average adult weighs between one-and-a-half and two pounds. The largest catch ever recorded was over 44 pounds, and we’re kind of glad we didn’t meet that particular lobster. In general, though, the adult North American lobster is a substantial catch, and right for the table.

With a Taste All Its Own

In taste tests, put your money on the North American lobster; they win every time. The water temperature hereabouts leads to smooth, tender lobster meat that’s an unmistakable blend of sweet and salty. And our waters are abundant with the lobster’s favorite foods, which include mussels.

In contrast, spiny lobsters – called rock lobsters sometimes – are grainy and available only as tails. The meat is considered dryer, coarser, and less flavorful.

Even the shells of North American lobsters are more cooperative. Hard enough to protect your lobster, and even to keep the claw meat piping hot for a while after serving, their shells are easier to open than other species.
