Broadbill Swordfish Xiphias gladius
A BST signature product, our fresh swordfish comes from our own longline fishing vessels, as well as from some of the best fishermen in the North Atlantic swordfish fleet, which fishes from the Gulf of Mexico to the Grand Banks off Newfoundland, depending on the time of year.
Our peak production is in the summer, when swordfish follow the Gulf Stream and feast on shoals of mackerel, herring and squid in the cold waters of the North Atlantic.
These salmon-colored sword are rich, tender and full of flavor. Depending on the time of year, we also purchase swordfish from the longline fleet that operates out of Hawaii.
